QUICK AND DELICIOUS VIETNAMESE RICE VERMICELLI
Who doesn’t love a supper idea that is beyond easy and involved minimal cooking! A favorite quick and delicious meal in our homes in Vietnamese Rice Vermicelli! Another great perk of the meal is that most of it can easily be prepared ahead of time and quickly prepared when your ready to eat!
Britt lives in a small town, which means the take out options are very limited. While living in the city her family fell in love with Rice Vermicelli meals. After a few years of being very limited when she could enjoy this meal she sought out to recreate it herself!
This meal is a great option when you have a busy day! With only a few minutes of prep time you can have supper ready in 15 minutes later that night! The other great part is that it’s NOT one of those easy crockpot meals!
Pork, Chicken or No Meat if you Prefer
Let’s start with the meat. Now eating this meal without meat is also an option. There is a delicious marinade that is meant for Vietnamese Meat, however it can be hard to find. Basically you want to create some kind of sweet and tangy marinade. Another option is a Korean BBQ marinade. The marinade really does add to the flavor of this quick and delicious meal. It is also best to let the meat marinade for a few hours, even prepping it the night before is great! The 2 meats that we prefer are chicken breasts or lean pork chops. BBQing the meat also gives it a smoky flavor which is a great combination for this dish as well.
Next up is the Rice Vermicelli. Not all vermicelli noodles are created equal. These are a few of the brands that we love!

You have 2 options when it comes to preparing the Vietnamese noodles. First, and Britt’s favorite option is to soak them all day. Place the noodles in a bowl and cover them with water and let them sit all day (5-8 hours). Then when you start to cook the meat boil water change out the water for the boiling hot water. This will heat up the noodles and finish cooking them if they were still a bit hard.
Second option for cooking rice noodles if to flash boil them. Bring a pot of water to a boil and add the rice vermicelli to the boiling water for 2- 5 minutes. DO NOT overcook your noodles! Over cooked noodles will bust apart and can have a weird texture.
The best part of this dish is that it involves fresh veggies! You can customize this dish to the amount of veggies you would prefer! We love to slice up carrots and cucumbers into thin strips! Chopped lettuce adds some crunch to the dish. An iceberg or romaine lettuce works great! Bean sprouts are so good with this dish as well! They add freshness and crunch! (At the time of making this meal groceries were on shortage due to covid-19 so bean sprouts were not available).
Peanuts are optional but peanuts add an earthy taste. Use plain roasted peanuts.
Fish sauce is probably the most important part of this dish. Finding a good fish sauce may be hard. This is by far my favorite one I have found and may be better than any fish sauce we have had from a restaurant! Pour the fish sauce into a small saucepan and heat just before the meat is finished cooking.
When you are ready to enjoy this quick and delicious meal simply cook your meat on the BBQ (or in a frying pan). While the BBQ is heating up boil water for your noodles. Then while the meat is cooking, which should only take 15 to 20 minutes.
Once the meat is on the BBQ you can prepare your vegetables. Once your vegetables are prepared heat the fish sauce on the stove.
To serve this meal add rice vermicelli noodles to your plate. Then add each element on top of the noodles. Britt likes to keep all of the elements separated. Pour approximately ½ cup of fish sauce on top!
