We don't know about you but we love quick and easy recipes around here! Especially if they taste amazing! There is an added bonus if they are super healthy for you as well. Deb makes these yummy Haystack cookies for her whole family to enjoy! In fact, her 8 year old daughter is able to make them all by herself too! She is always so proud of herself when she can do a recipe from start to finish. So we hope you enjoy this yummy, simple recipe as much as we do!
1 package (300 grams) milk chocolate chips
1 cup quick oats
1 cup old fashion oats
1 cups shredded sweetened or unsweetened coconut
Yields: 25 pieces
Prep Time: 2 minutes
Cook Time: 5 minutes

- Step 1 - Melt chocolate chips in a glass container in the microwave for 1 minute or over low heat in a double boiler, stir until completely melted.
- Step 2 - In a medium bowl stir together the oats and coconut.
Tip - If you want to make this recipe extra healthy, simply sub out the milk chocolate for dark chocolate! Such a yummy treat!
- Step 3 - Stir melted chocolate and pour into the bowl to combine with the coconut and oats. Continue to stir until the coconut and oats are completely coated with the melted chocolate.
- Step 4 - Form cookies onto parchment lined cookie sheet. Refrigerate for 15 minutes or pop in the freezer for 10 minutes, until firm.
- Step 5 - Enjoy!
